The scallion pancakes bought from roadside stalls are delicious, but they are worried about the oil, so it is best to make them yourself.
Flour content
A dash of scallion
A little oil
Pinch of salt
Pepper powder in small amount
Get a clean basin and make it bigger for mixing.
It shouldn't be too wet, it shouldn't be too dry. Knead hard and often.
After kneading, wake up for 20 minutes.
The scallions, make sure they're finely chopped.
When you wake up, knead it again. Break it into small pieces.
Roll out the skin, thin.
Rub with oil, sprinkle with salt and scallion.
Roll it up on one side, roll it up on the side of the strip.
Roll it into a crust.
Hot pan. I'm using a non-stick pan. No oil. Better cover the pot, cook quickly.
Flip side every minute.
Get out of the pot and serve with some pickles.
Don't burn it.
