First, wash the lamb in water to remove the blood stains and the sheep oil attached to the surface

Then put the meat into the pot, without any seasoning, boil with cold water, the water should be over the meat, after the pot must be beaten clean, otherwise the pressed mutton soup not only gray color, taste will be reduced.

Add the fresh ginger, Sichuan peppercorns, salt and dried ginger to the pot. Cook for 50 minutes until the mutton is not old. Remove the soup from the pot. (Regular pot takes 90 minutes)
